A Sandwich by Any Other Name


Without a doubt, sandwich creation has become my all-time favorite way to create a meal. There’s nothing better than looking in the refrigerator on those days when you don’t know what to cook and all you have in the refrigerator are left overs: some vegetables, a slice or two of cheese, tomatoes, and oh yea, left over sautéed chicken and some mustard! And if you have avocados on hand, they are an added delight!

Sauteed chicken tenders or thigh on toasted sprouted grain bread with spinach, cherry tomatoes sliced in half, Swiss cheese and Dijon mustard. Before you add the top slice of bread, place your creation in the oven for a few seconds to melt the cheese just so.

Your kids might come around and ask “What are you cooking?” You simply say, “Oh, nothing,” because you really don’t have a name for it. It’s just that your creativity flowing and you don’t know where this might end, but low and behold! About ten minutes or so later, you have a masterpiece. This is how I have created my best recipes. Just trying this and that. I encourage you not to be afraid to take risks on your nutritional journey of eating healthy and living well. Take chances. Have fun. Make your meals exciting. Go where no man has gone before with your creations! I will repeat this for the 100th time: Healthy eating does not have to be boring and bland.
