Chicken, Broccoli and Sweet Potatoes Recipe


I love it when I have all the ingredients on hand to make a new recipe. Someone sent a video to me on Facebook this week for chicken, broccoli and sweet potatoes. I eat chicken all the time and I love to make broccoli and sweet potatoes as side dishes but never as a main course.

This recipe was refreshing because it gave me a chance to cook my favorites a different way and it was delicious. I tweaked it a bit by adding the onion powder and basil to the marinade. Recipe: In a bowl add 1/4 cup olive oil, 1 tsp. each of garlic and onion powder, 1/2 tsp. oregano, basil, black pepper and sea salt. Add about 3 chicken breasts cut in bite size pieces. Marinade for 15 minutes (I marinated mine for about 30 min. because I was busy cutting up my broccoli and sweet potatoes).

Place the broccoli and sweet potatoes in your roasting pan, add the chicken with the marinade, toss around and cook in a preheated 375 degree oven for 45 minutes. Give it an occasional stir just to make sure things don’t stick to the pan. I did turn my oven up to 400 degrees after 30 minutes because I needed to get things moving and 375 seemed a bit too slow for me! I also drizzled a little bit more olive oil over the dish before putting it in the oven because I cooked a bit more than what the original recipe called for. This dish is really easy to make and quite delicious! Weight loss is easy to maintain when you eat like this, coupled with exercise. There is a path that leads to wellness and a path that leads to chronic disease; eating like this is a definite path to wellness!!
